Charcoal-Grilled Al Pastor Skewers Recipe

Ingredients:

  • 2 lbs pork shoulder, thinly sliced
  • 3 dried guajillo chilies, seeds removed
  • 2 dried ancho chilies, seeds removed
  • 1/4 cup pineapple juice
  • 1/4 cup orange juice
  • 2 cloves garlic
  • 1/4 cup white vinegar
  • 1 tbsp achiote paste
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp ground cloves
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1/4 cup chopped fresh cilantro
  • 1 small pineapple, peeled and cut into chunks
  • Corn tortillas, for serving
  • Lime wedges, for serving
  • Diced onions, for garnish

Instructions:

  1. Toast the dried chilies in a dry skillet over medium heat until fragrant, about 2 minutes. Soak them in hot water for 15 minutes to soften.
  2. Drain the chilies and blend them with pineapple juice, orange juice, garlic, vinegar, achiote paste, oregano, cumin, cloves, black pepper, and salt until smooth.
  3. Marinate the sliced pork in the chili sauce for at least 4 hours, preferably overnight in the refrigerator.
  4. Thread the marinated pork slices and pineapple chunks alternately onto skewers.
  5. Preheat your charcoal grill to medium-high heat.
  6. Grill the skewers, turning occasionally, until the pork is cooked through and slightly charred, about 10-15 minutes.
  7. Remove from the grill and let rest for a few minutes.
