What Are Scotcheroos?

Scotcheroos are a no-bake dessert bar made with:

  • Peanut butter – The creamy base that binds the cereal.
  • Rice Krispies cereal – Provides the signature crunch.
  • Corn syrup & sugar – Creates a sticky, chewy texture.
  • Chocolate & butterscotch chips – The decadent topping that sets them apart from regular Rice Krispies treats.

Unlike traditional Rice Krispies treats, Scotcheroos have a richer, more complex flavor thanks to the peanut butter and butterscotch-chocolate combo.


Ingredients You’ll Need

For the Base:

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 6 cups Rice Krispies cereal

For the Topping:

  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Step-by-Step Instructions

Step 1: Prepare the Pan

  • Line a 9×13-inch baking dish with parchment paper or lightly grease it with butter to prevent sticking.

Step 2: Make the Peanut Butter Mixture

  1. In a medium saucepan, combine 1 cup sugar and 1 cup corn syrup.

  • Pour the peanut butter mixture over 6 cups Rice Krispies cereal in a large bowl.

  1. In a microwave-safe bowl, combine 1 cup chocolate chips and 1 cup butterscotch chips.

Step 6: Spread the Topping

  • Pour the melted chocolate-butterscotch mixture over the cereal base.

  • Allow the Scotcheroos to cool at room temperature for about 1 hour (or refrigerate for 30 minutes for faster setting).
